Seriously, you can't mess this one up! Making homemade Whole30 compliant mayo is a huge money-saver and only takes a couple of minutes.

Foolproof Whole30 mayo ingredients

 1 cup Extra Light Tasting Olive Oil
 1 Egg
 ½ tsp Ground Mustard
 1 tsp Kosher Salt
 1 tbsp Lemon juice - either fresh or bottled
 1 Glass jar - wide mouth is best

Crack egg into jar.

Pour olive oil into jar over the egg.

Add salt, mustard and lemon juice.

Position immersion blender at the bottom of the glass jar over the egg. Start immersion blender and keep it going in the same position for about 30 seconds. Slowly pull blender up to incorporate more of the oil into the emulsion. Continue to move blender up and down in jar until all oil is incorporated, about 1 minute.

Store with a lid in the refrigerator- it should last for about a week. Doctor up your mayo with your favorites- hot sauce, pesto, ranch seasoning!
